We will admit that it\u2019s a recipe with a lot of ingredients and several steps, but it\u2019s definitely worth the effort and will be a sure crowd pleaser at your next event.<\/p>\n<p style=\"text-align: center;\">We recommend you serve this filo delight with a choice of salads and chargrilled vegetables. To accommodate all your guests, you could also serve with a selection of cured meats and flavoursome parmesan cheese.<\/p>\n<p style=\"text-align: center;\">Serves 6 &amp; approx. 390 calories per serving.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][et_pb_row _builder_version=&#8221;3.25&#8243; background_size=&#8221;initial&#8221; background_position=&#8221;top_left&#8221; background_repeat=&#8221;repeat&#8221; column_structure=&#8221;1_2,1_2&#8243;][et_pb_column type=&#8221;1_2&#8243; _builder_version=&#8221;3.25&#8243; custom_padding=&#8221;|||&#8221; custom_padding__hover=&#8221;|||&#8221;][et_pb_text _builder_version=&#8221;3.27.4&#8243; text_font=&#8221;Lato||||||||&#8221;]<\/p>\n<p style=\"text-align: center;\"><strong>Ingredients <\/strong><\/p>\n<p>1 tbsp cold-pressed rapeseed oil, plus extra for greasing 1 onion, chopped 1 large garlic clove, finely chopped 1 heaped tsp grated fresh ginger 1 tsp garam masala \u00bd\u00a0tsp ground cumin \u00bd\u00a0tsp ground coriander 450g squash or sweet potatoes, chopped 400g tin chickpeas, drained 200ml vegetable stock 400g tin chopped tomatoes 125ml light coconut milk 100g frozen spinach 8-10 filo pastry sheets [\/et_pb_text][\/et_pb_column][et_pb_column type=&#8221;1_2&#8243; _builder_version=&#8221;3.25&#8243; custom_padding=&#8221;|||&#8221; custom_padding__hover=&#8221;|||&#8221;][et_pb_text _builder_version=&#8221;3.27.4&#8243;]<\/p>\n<p style=\"text-align: center;\"><strong>Method<\/strong><\/p>\n<ol>\n<li>Heat 1 tbsp of the rapeseed oil\u00a0in a large, heavy-based pan and cook the onion until softened. Stir in the garlic and ginger, then cook for another 30 seconds. Add the spices and cook\u00a0for a further minute, whilst stirring.<\/li>\n<li>Tip the sweet potatoes and chickpeas into the pan and stir, cook for\u00a0a couple of minutes. Stir in the stock, tomatoes, coconut milk. Season with salt and pepper. Bring to the boil, then reduce the heat and simmer for 20-25 minutes until the\u00a0sweet potato is partly boiled.<\/li>\n<li>Stir the frozen spinach into the sweet potato mixture and cook for 10 minutes or until the spinach is cooked through. If there is still excess liquid, simmer for a little longer. Remove from the heat and leave to cool completely.<\/li>\n<li>Heat the oven to 180\u00b0C\/160\u00b0C fan\/ gas 4. Brush the base and sides of a 1.5 litre ovenproof frying pan with rapeseed oil (or you can use a 23cm loose-bottomed cake tin).<\/li>\n<li>Brush 4-6 of the filo sheets with rapeseed oil, then lay them in the pan or tin so they cover it evenly and hang over the side. Spoon in the cooled sweet potato mix and spread. Fold over the overhanging filo to cover the filling. Scrunch up the remaining filo sheets and arrange them on top to cover the top of the pie and brush with\u00a0a little oil. Bake for 35-40 minutes until the filo is crisp and golden.<\/li>\n<li>Carefully slide out the pie from the pan (or remove from the tin) onto a board. Serve with your sides of choice.<\/li>\n<\/ol>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][et_pb_row _builder_version=&#8221;3.25&#8243; background_size=&#8221;initial&#8221; background_position=&#8221;top_left&#8221; Preheat an oven to 250\u00b0C. Place the aubergines directly on the oven rack and roast for 20 minutes or until they are charred on the outside. Remove and set aside to cool. Scrape the aubergine flesh from the skin (which you can discard). Chop the aubergine flesh roughly and season with garlic oil, a pinch of coffee powder (to give a smoky flavour), salt and pepper, and chopped chives.<\/p><p>2. Meanwhile, lay half the speck on a work surface, overlapping the slices to form a rectangle. Put 5 of the sage leaves at regular intervals on top then place one pork tenderloin on top and wrap it up in the speck. Repeat with the remaining speck, sage and pork.<\/p><p>3. Place the pork in the fridge to chill for 10 mins<\/p><p>4. Reduce the oven temperature to 180\u00b0C. Heat a non-stick frying pan with a glug of extra virgin olive oil. Sear the pork bundles for 5 minutes, then take them off the heat and add a knob of butter. Transfer the pork to the oven to cook for 10 minutes. Remove from the oven and leave to rest on a tray for 10 minutes.<\/p><p>5. Heat the veal stock in a small pan ready to serve.<\/p><p>6. Carve the meat in thick slices and arrange on a long plate with scoops of the aubergine mixture. Dress with the dried tomatoes, picked onions and spoon over some hot veal stock. Finish with shavings of ricotta.<\/p><hr \/><\/div><\/div><\/div><h2 style=\"text-align: center;\">DESSERT:<\/h2><h2 style=\"text-align: center;\">RICOTTA SEMIFREDDO<\/h2><div><div><p style=\"text-align: center;\">\u2018Semifreddo\u2019 is an Italian term that refers to any number of half-frozen or chilled desserts. This recipe uses ricotta to make it a lighter, yet deliciously different dessert for Mother\u2019s Day. Serve on\u00a0<a href=\"https:\/\/www.royaldoulton.com.au\/%22http:\/\/row.royaldoulton.com\/collections\/tableware\/gordon-ramsay-union-street\/\/%22\">Union Street<\/a>\u00a0plates and top with berries of your choice. It\u2019s a perfect Mother\u2019s Day dessert recipe for two or more.<\/p><p><img src=\"https:\/\/www.royaldoulton.com.au\/uploads\/images\/mothers_day_dessert.jpg\" alt=\"\" \/><\/p><div><div><h3>INGREDIENTS<\/h3><p>100g white chocolate<br \/>60g caster sugar<br \/>120g egg whites<br \/>170g ricotta<br \/>170g cream cheese<br \/>Zest of half a lemon<br \/>50g honey<\/p><\/div><\/div><div><div><h3>METHOD<\/h3><p>1. Gently melt the white chocolate in a heatproof bowl over a pan of steaming water. Do not let the base of the bowl touch the water or the chocolate will seize.<\/p><p>2. Next, make the Italian meringue: this will be the base of the semifreddo. Put the sugar in a saucepan with a splash of water and using a sugar thermometer, bring it to 118\u00b0C. Whisk the egg whites in an electric mixer and, once ready, slowly add the sugar syrup down the side of the bowl. Whisk on high speed until the meringue has cooled.<\/p><p>3. In a separate bowl, beat the ricotta, cream cheese and lemon zest together. Beat in the melted white chocolate. Fold the Italian meringue into the ricotta and white chocolate mixture. Set in a mould of your choice in the freezer overnight.<\/p><p>4.
